PURPOSE:To produce a water-in-oil type emulsion for acidic coating, having improved emulsion stability and coating characteristics, good preservation of cool temperature and room temperature, by using two fats and oils having different melting points as raw materials. CONSTITUTION:Fats and oils having high melting point are blended with 3-15wt% based on the fats and oils of an emulsifying agent and melted to prepare a high-melting oil phase component. Separately, an aqueous phase component is blended with 15-65wt% saccharide, 0.1-1.0wt% acidic substance and 1.0-5.0wt% emulsifying agent and melted to prepare an aqueous phase component. Then 10-30wt% high-melting oil phase component is blended with 90-70wt% aqueous phase component and homogenized to prepare an oil-in- water type emulsion. 60-15wt% based on a final product of the oil-in-water type emulsion is mixed with 40-85wt% low-melting fats and oils and the prepared mixture is stirred at a temperature <=the melting point of the high-melting fats and oils so that the oil-in-water type emulsion is subjected to phase conversion to a water-in-oil type emulsion. |
