An unripened block of non-melted cheese has a semipermeable jacket of food gel controlling the exchange of enzymes, ions, gas, salt and amino acids to preserve and ripen it. The gel is pref. wrapped in polyethylene or polypropylene film. A method of ripening the cheese and a wrapper for it are also claimed.
