<p>A process for manufacturing potato fibers and potato fibers manufactured in the process. According to the process, potatoes (1) are subjected to washing (2), dividing (3) into fruit juice, starch and pulp, and subsequently separating (4) of starch (8) from fruit juice and pulp (5). The process is distinguished in that solid impurities are removed (6) from the pulp, fruit juice being defoamed (9) and added to the pulp (5) to form a pulp/fruit juice mixture (10) which is relieved of solid impurities by density separation. Subsequently, the pulp is dewatered (11) to remove part of the fruit juice, and the dewatered pulp is refined (12) such that the content of fruit juice and dissolved salts in the pulp is reduced in that the pulp is prepressed (13) to a dry solids content of 20-30% and thereupon washed (14) by adding water to obtain a dry solids content of 11-16%, whereupon the pulp is finally pressed (15) to a dry solids content of 20-30%. Finally, the refined pulp is subjected to drying (16) and grinding (17) to the final potato fiber product (20).</p> |
