PURPOSE:To prepare a fish paste product having the taste and palatability of smoked salmon, by kneading ground fish meat with a specific amount of the starch of glutinous rice, e.g. waxy starch, freezing the mixture slowly at specific thickness and temperature, and heating without thawing. CONSTITUTION:(A) Ground fish meat is kneaded with (B) 5-20% of the starch of glutinous rice, e.g. waxy starch. The mixture is formed to a plate having a thickness from 2-3mm. to 50mm., and frozen slowly at 0--25 deg.C. The frozen product is heated without thawing to obtain the objective fish paste product. |
