PURPOSE:To prepare CHIKUWA (a bamboo-shaped broiled fish paste) having excellent springiness and high quality, by wrapping a CHIKUWA ram material round a skewer made of a magnetic metal, irradiating the material with far infrared radiation while rotating the material round the axis to effect the toughening of the material and broiling the treated material at a high temperature. CONSTITUTION:A CHIKUWA raw material 3 extruded from a molding machine 1 is wrapped round a skewer 2 made of a magnetic metal material such as SUS 21, etc., and supplied to an upper screw conveyor 8a of a toughening treatment zone 5 under rotation round its axis with a screw conveyor 4. The material is toughened by far infrared radiation radiated from a far infrared heater 29 (10a) consisting of a heat-generation plate 30 heated with an electric heater 34 and generating far infrared radiation. The toughened material is transferred with a transfer rotor 9 to a lower screw conveyor 8b and again subjected to toughening treatment by the irradiation of far infrared radiation generated by a heater 29 (10b). The toughened CHIKUWA material is transferred via the rotor 9 to a screw conveyor 13 of a high-temperature treatment zone 3, oiled with an oil applicator 15, broiled at a high temperature with a high-temperature broiling heater 14 and cooled with a forced air-cooling treatment chamber 20 and a spontaneous cooling zone. |
