For the reheating and/or final baking of foods, in particular products to be baked and grilled, a mixture of hot air and steam is introduced directly before and/or during the heating process into the interior of the food. Particularly suitable for this purpose is an apparatus which comprises a baking oven, into the baking chamber of which baking steam from a baking steam generator can be introduced, in which oven the baking steam generator is provided with an injection apparatus arranged in the baking chamber, by means of which injection apparatus the baking steam can be introduced into the interior of a food.
