PURPOSE:To improve the taste and flavor of liver and produce a processed liver food having meat-like taste and palatability, by mixing liver with a fibrous soybean protein texturized with a twin-screw extruder. CONSTITUTION:A fibrous soybean protein produced by extrusion molding with a twin-screw extruder is mixed to liver at a rate of 5-60wt%, preferably 30-50wt% (solid basis). The mixture is packed in a casing, formed in the form of retainer and frozen. |
