PURPOSE:To carry out cooking and sterilization of gruel at the same time and to prepare gruel having constantly uniform and high quality, by sealing rice and a seasoning liquid in a heat-resistant container in vacuum state and heating the container at a specific temperature under rotation. CONSTITUTION:Rice (unpolished rice, whole rice, polished rice, crushed rice prepared therefrom, etc.) and a seasoning liquid are put into a heat-resistant container and sealed in a vacuum state. The container is fixed in a rotary pressurized thermal sterilizer and rotated to mix the rice and the seasoning liquid in the container. The content is further heated by the combined use of hot water of 70-140 deg.C and heated steam or exclusively by heated steam to effect the simultaneous cooking and sterilization of gruel in the container. The labor and time for the treatment can be remarkably saved and a gruel having constantly uniform high quality can be prepared by this process. |
