PURPOSE:Propylene glycol food additive purpose is added to an aqueous ethanol solution to give an immersion freezing mixture which can refrigerate food more rapidly when conventional and has actions to improve food quality and sterilize microorganisms. CONSTITUTION:An aqueous ethanol solution of 40-60wt%, preferably 50-60wt% concentration is combined with 2-20wt%, preferably 2-15wt% of propylene glycol for food additive purpose, further less than 0.5wt% of sodium glutamate and less than 1wt% of malic acid as stabilizers so that the freezing point is adjusted to lower than -45 deg.C. |
