The invention relates to a fish paté, particularly trout paté and to a method for producing it. The method of the invention is characterised in that it consists in eviscerating the fish, in removing the fillets, in very finely grinding the head, the tail, the spine and the skin, in more coarsely grinding or crushing the said fillets, in mixing everything together, in, optionally, adding various ingredients in order, for example, to give colour, to enhance the taste or to impart a particular flavour, in placing the mixture in a suitable container for preserving it, in crimping the said container, and in subjecting it to sterilisation in an autoclave. Application to the production of fish paté, particularly trout paté. |
