PURPOSE:To obtain raw noodles having shortened boiling time without damaging texture feeling of color and taste, by allowing raw noodles to stand in a carbon dioxide gas atmosphere under cooling. CONSTITUTION:Raw noodles produced by a conventional procedure are put in a closed container, a carbon dioxide gas is fed to the container and the raw noodles are left to stand under cooling at 5-10 deg.C preferably for 2-20hr to give the aimed raw noodles. The raw noodles and dry ice are put in a container and left standing. |
