PURPOSE:To obtain noodles having strong springiness, good flavor and improved sense of eating, by subjecting a SHIITAKE mushroom ingredient extract solution to specific treatment and fermenting a noodle dough using the resultant active yeast-containing solution as a hydrating solution. CONSTITUTION:(A) SHIITAKE mushrooms are treated with hot water to give a SHIITAKE mushroom ingredient extract solution and a sugar, salt, etc., are added thereto. An organic acid is simultaneously added to adjust the pH of the mixture solution to <=4.5. The resultant mixture solution after adjusting the pH is then thermally sterilized, cooled and inoculated with a yeast to activate the yeast. (B) the resultant active yeast-containing solution is used as a hydrating solution in producing noodles and ferment a noodle dough. The above-mentioned SHIITAKE mushroom ingredient extract solution containing mixed solid materials is used without filtration or as a filtrate without containing the solid materials obtained by filtering the solution. Common salt or potassium chloride may be cited as the salt used. |
