Process and apparatus for desiccating food products such as pasta characterized in that it comprises one or more steps of rapid desiccation with high surface evaporation followed by one or more steps with atomization of water on the product and on its surrounding environment. This allows to humidify the surface layer of the product and facilitate a homogeneous redistribution of water in its interior. |
