NEW MATERIAL:An alcohol dehydrogenase complex having the following characteristics. (A) An enzyme complex containing proteins having molecular weights of about 72,000 and about 44,000 determined by SDS-polyacrylamide electrophoresis, (B) containing 4,5-dihydro-4,5-dioxo-1H-pyrrolo[2,3- f]quinoline-2,7,9-tricarboxylic acid, (C) capable of oxidizing >=2C alcohol, formaldehyde and acetaldehyde as substrates and (D) solubilizable from cytoplasm membrane with a surfactant. USE:Determination of ethanol in brewed food or during fermentation of Japanese rice wine. PREPARATION:A microbial strain belonging to Acetobacter genus such as Acetobacter altoacetigenes MH-24 (FERM BP-491) or Acetobacter xylinum (IFO 3288) is cultured and the objective substance is separated from the cultured product. |
