An apparatus for processing either a fresh or frozen piece of meat 100, in particular for frenching a rack of lamb. A pair of chain conveyers 32,34 each incorporating teeth 64 are mounted in adjacent spaced apart relationship on a bench. A piece of meat 100 is transported along by and between the conveyer chains 32,34 with the teeth 64 thereof gripping the meat 100. The piece of meat 100 is orientated on the conveyer 32,34 to dispose a required section thereof to a cutting zone 17,19. At a first cutting station 17 liquid jey cutting means 80 are located to either side of the path of the meat 100 to direct a liquid jet onto the predetermined section and cut thereinto. At a second cutting station 19 a liquid jet stripping means 90 is provided to remove the previously cut meat. |
