PURPOSE:To obtain an anti-foaming agent composition widely usable for produc ing foods and feeds and for fermentation industry, having hygienic safety and improved anti-foaming properties, by using lipid treated with a lipid decomposing enzyme as an esential component. CONSTITUTION:One or more lipids selected from a group consisting of fats and oils, polyhydric alcohol fatty acid ester, soybean phospholipid and natural wax are hydrolyzed with a lipid decomposition enzyme such as phospholipase, etc. An anti-foaming agent composition comprising one of the hydrolyzed lipid or a blend of the lipids as a fundamental constituent component, which is further optionally blended with one or more of the above-mentioned lipids which are not treated with the enzyme. |
