The process comprises the cereals being delivered to a treatment room which has a plurality of trays arranged in vertical sequence and, in this room, being transferred from one tray to the next from top to bottom and being treated with a medium, in each case one layer of the cereals lying on one tray being removed and placed on the tray underneath. This process is characterised in that the cereals are kept in essentially constant vertical motion downwards, with the layer removed from one tray being placed on the other tray underneath in such a way that the cereals layers retain their mutual relative position. This entails a thin layer of cereals lying at the bottom of the tray in each case being removed and then placed on the upper surface of the cereals layer located on the tray underneath. This results in the cereals passing vertically, without altering the layers, continuously through all stages of the malting device and, at the same time, being exposed to the aeration and drying medium on the countercurrent principle. Also described is a device for carrying out the process, in which a slide device is located directly on the bottom of the tray and cooperates with the latter for continuous removal of layers of the cereals. The slide device is integrated in the bottom of the tray to result in tray modules which are repeated in essentially all stages from the steeping stage to the cooling stage. <IMAGE> |
