PURPOSE:To obtain the titled food having excellent heat-resistance and palatability, easily addable to other fluid or gelatinous tasteful food and giving a feeling of fullness, by dissolving a specific composition containing natural polysaccharide and polyhydric alcohol in water and adding the resultant high-strength gelatinous block to a food. CONSTITUTION:A composition (A) containing a natural polysaccharide and a polyhydric alcohol is produced by kneading (a) 1pt.wt. of one or more natural polysaccharides selected from alginic acid (derivative), agar, carrageenan, guar gum, pectin, xanthan gum, chitin, etc., and optionally (b) a protein in (c) 0.1-15 pts.wt. of a system composed of one or more substances selected from polyhydric alcohol (e.g. glycerol), sugar alcohol (e.g. sorbitol), monosaccharide (e.g. glucose), disaccharide (e.g. saccharose) and oligosaccharide. The composition A is dissolved in water to form a high-strength gelatinous block having higher hardness than the food base material and the block is mixed into a food (B). |
