Pollen prod., for use in the foods, is obtd. by (a) cleaning and selecting the pollen; (b) grinding in a hammer mill to reduce the particle size; (c) incorporating sugar to give the desired sweetness; (d) adding lemon essence as flavouring and 0.01-15% anti-caking agent consisting of dispersant SlL01-240 and MgCO3 as drying agent; (e) adding malic or citric acid; and (f) homogenising the mixt. |
