PURPOSE:To produce a separation-type liquid seasoning separating into an oil phase and an aqueous phase in a short time when left at rest and giving a distinct and clean horizontal boundary plane, by dissolving lecithin in the oil phase. CONSTITUTION:Lecithin is dissolved in an oil phase of a two-phase separation- type liquid seasoning composed of an aqueous phase and an oil phase, e.g. a French-type dressing, etc. The amount of lecithin is about <=5wt% of the oil. If necessary, a surfactant such as sucrose fatty acid ester, glycerol fatty acid ester, etc., is dissolved together with lecithin at an amount of <=1/2 of lecithin. |
