PURPOSE:To prepare a fruit peel paste having excellent dispersibility in water and suitable as a seasoning, flavor, etc., by coagulating and insolubilizing pectin in fruit peel with calcium ion. CONSTITUTION:Peel of citrus fruit (tangerine, citron, lemon, etc.) or other fruit is ground with a mixer by conventional method to obtain a peel paste. In the above process, calcium ion, preferably a bivalent alkali metal salt such as calcium lactate, calcium chloride, etc., is added to the system at an arbitrary stage at an amount of 0.05-1.5wt% based on the peel. |
