Method for removing the skin from double fillets 17 by means of the skin along the dorsal fin between the fillet sides being clamped securely in a transport device 11 with the fillet sides twisted, so that its skin sides are directed towards each other, and the thus twisted fillet sides are driven against skinning knives 19 which separate the fillets from the skin. The object is to achieve a method and a device for removing even very delicate and thin skin. Another object is to perform the skinning such that the silver membrane under the skin remains intact and the black membrane is removed. This has been achieved by the fact that the fillet sides are distanced slightly from the transport device by means of spacer members 18 situated directly adjoining the skinning knives 19, and by the fact that at the upper area of the spacer members 18, at least nearest the skinning knives 19, the side parts of the fillet sides are subjected to a directional change successively increasing in the direction away from the upper edge of the spacer members 18, so that the fillets are stripped off from the skin, and the skin and any dorsal fins can freely pass a space A situated between the skinning knives and the transport device. <IMAGE>
