PURPOSE:To obtain fish collar having fish taste, flavor and savor free from bone and skin, by laying cloth on a reed screen, putting thin slices of fish on the cloth, winding the reed screen on the thin slice in a manner to coil vinegared rice rolled in laver and heating. CONSTITUTION:A fish is cut into three meat parts, made into fillets, bone and skin are removed from the fillets and the fillets are processed into wide thin slices 1. Then, cloth 3 such as lawn, etc., coated with an oil is laid on a reed screen 2, the thin slices 1 are placed on the cloth 3, the thinly cut slices 1 are wound with the reed screen in a manner to coil vinegared rice rolled in laver and heated to give the aimed fish collar. Preferably the fish slices 1 are wound with the reed screen 2, cylindrical caps 4 are fixed to both the sides of the reed screen 2, the caps are rolled with rubber bands 5 not to make the caps come off and the collar in the interior is adjusted and heated. |
