PURPOSE:To prepare CHIKUWA (bamboo-shaped fish paste) imparted with SUWARI (giving tough feeling to the plate) uniformly to the center in a short time, by wrapping a raw material for CHIKUWA around a skewer made of a magnetic material and passing the skewer through a far-infrared irradiation zone. CONSTITUTION:A raw material for CHIKUWA is wrapped around a skewer, imparted with SUWARI, broiled and lustered to obtain a CHIKUWA. In the above process, the skewer S made of a magnetic material is wrapped with a CKIKUWA raw material W and passed through a far-infrared irradiation zone. The process for imparting SUWARI can be carried out in a short time compared with conventional method. |
