The invention relates to a unit for expressing an amyloglucosidase in a yeast, characterised in that it comprises: - the amyloglucosidase gene devoid of all or part of its introns; - the DNA sequence containing the signals which bring about the transcription of the amyloglucosidase gene by the yeast; - a coding sequence containing the signal required for exporting the mature amyloglucosidase into the extracellular medium. More particularly, the invention relates to expression units intended for integration into the genome of an industrial yeast.
