The invention relates to a process for the preparation of a product containing living microorganisms, especially lactobacilli, in a concentration of at least 10<8> microbes/g, in particular in powder form, where the microorganisms are distinguished by good stability at ambient temperature and pronounced souring activity on a protein- and carbohydrate-containing nutrient medium, are gram-positive, catalase-negative, grow on lactobacillus agar and show a certain tolerance to acids and bile salts. The invention is characterized in that lactobacilli obtained from natural sources, in particular digestive tracts of mono- and polygastric animals, cereals and plants are selected and grown further in a nutrient medium containing soya protein, malt extract and little or no milk constituents, and are stabilized when a pH of 3.5 to 4.5 is reached, preferably about 4, by means of drying with the action of air or in vacuum. |
