PURPOSE:To provide the titled oil and fat composed of an edible oil or fat, an aqueous solution of a polyhydric alcohol, a polyglycerol fatty acid ester, an organic acid glycerol fatty acid ester, a natural edible wax and lecithin and capable of giving noodle having excellent palatability and resistant to the breakage of the noodle string. CONSTITUTION:100pts.wt. of a mixture composed of 20-60pts.wt. of an edible oil or fat (e.g. repeseed oil) and 80-40pts.wt. of an aqueous solution of a polyhydric alcohol (e.g. sorbitol) having a concentration of 40-60% is added with 0.5-3pts.wt. of a polyglycerol fatty acid ester having a polymerization degree of 2-10, 0.05-1pt.wt. of an organic acid glycerol fatty acid ester (e.g. succinic acid glycerol monostearate), 0.05-3pts.wt. of a natural edible wax (e.g. rice wax) and 0.05-3pts.wt. of lecithin. |
