PURPOSE:To obtain egg yolk lecithin having reduced phosphatidylethanol (PE) in high yield on an industrial scale, by dissolving egg yolk lecithin in a polar solvent, etc., bringing the prepared solution into contact with an ion exchange resin and distilling the solvent away. CONSTITUTION:Egg yolk lecithin which comprises phospholipid and neutral lipid as main components and contains inorganic salts and free amino acids as impurities is dissolved in a polar solvent (preferably methanol, ethanol, acetone or dichloromethane) or a mixture of the polar solvent and a nonpolar solvent to give preferably 0.5-20% (v/v) egg lecithin. The prepared solution is brought into contact with an ion exchange resin and the solvent is distilled away from the solution to give egg yolk lecithin having reduced PE content.
