PURPOSE:To obtain the titled substance useful as a low sweetener in high yield, by making a xylan-containing natural substance into fine pieces, steaming or boiling, washing with water, treating the prepared water extract with ozone, purifying extract with an ion exchange resin, concentrating and drying up. CONSTITUTION:A xylan-containing natural substance such as broadleaf tree material, etc. is made into fine pieces and steamed or boiled. Then, the steamed or boiled material is washed with water and the prepared water extract obtained by water washing process is treated with ozone. Unnecessary substances obtained in the prepared reaction solution are removed by ion exchange resin. Then, the reaction solution containing xylose and xylooligosaccharide is concentrated and dried up to give a colorless fraction consisting of xylose and xylooligosaccharide.
