PURPOSE:To obtain an oil or fat for food resistant to oxidation and deterioration even in the absence of an antioxidant and effective in suppressing the peroxidation of a fatty acid, by dissolving fine powder of tea in an oil or fat for food. CONSTITUTION:Tea such as fermented tea, semifermented tea, roasted tea, green tea, etc., is pulverized to fine powder and dissolved in an oil or fat for food at a rate of about 0.5-50% dependent upon the kind of the tea and the use of the product. |
