PURPOSE:To obtain an oil or fat composition for cake suitable for giving a cake having soft texture and easily meltable in palate, by dispersing and emulsifying a citric acid salt and a food surfactant in an oil or fat, thereby forming a continuous phase of the oil or fat. CONSTITUTION:The objective composition can be produced by mixing and kneading (A) 20-99.8wt% food oil or fat such as vegetable oil or fat, animal oil or fat, shortening, margarine, etc., (B) 0.1-30wt% citric acid salt such as alkali metal citrate, alkaline earth metal citrate, etc., and (C) 0.1-50wt% food surfactant such as synthetic emulsifier, protein, phospholipid, etc., thereby forming a continuous phase of the oil or fat in the emulsion. |
