PURPOSE:To produce L-methionine in high efficiency, by culturing a microbial strain belonging to Bacillus genus or Vibrio genus and capable of converting N-carbamoylmethionine to the titled substance in a medium containing N- carbamoylmethionine. CONSTITUTION:A microbial strain belonging to Bacillus genus or Vibrio genus and capable of converting N-carbamoylmethionine to L-methionine, e.g. Bacillus sp. No.266 (FERM P-8465), Vibrio sp. No.256 (FERM P-8464), etc., is cultured in a medium containing N-carbamoylmethionine. As an alternative method, cell of the microorganism or treated cell is made to contact with N- carbamoylmethionine in an aqueous solution to obtain L-methionine. Any conventional medium can be used as the above culture medium provided that the medium contains N-carbamoyl-methionine and is alkalinized by the addition of sodium carbonate, sodium hydroxide, etc.
