PURPOSE:To produce the titled substance useful as a dietary sweetener, in high yield, by treating inulin and/or extracted liquid of inulin-containing vegetable with a bacterial strain belonging to Arthrobacter globiformis, etc. CONSTITUTION:A bacterial strain belonging to Arthrobacter globiformis, e.g. Arthrobacter globiformis H2-1 (FERM P-8749) is cultured in a medium containing inulin and/or extracted liquid of inulin-containing vegetable as sole carbon source. After the completion of culture, the obtained bacterial cell, cultured liquid, supernatant liquid of the cultured product after removing bacterial cells, etc., is added and reacted to inulin and/or extracted liquid of inulin- containing vegetable to obtain difructose dianhydride I. After inactivating the enzyme in the reaction liquid e.g. by heating, the product is purified e.g. by filtration, desalting, etc., to obtain the objective difructose dianhydride I. |
