PURPOSE:To produce seasoning or foods with enhanced good body free from bitterness of beer yeast characteristic and beer yeast smell, by blending seasoning with a water extract substantially causing no decomposition of beer yeast. CONSTITUTION:A beer yeast suspension is extracted with water by heat treatment under a condition substantially causing no decomposition of yeast, e.g. at 40-55 deg.C for 5-120min or 55-100 deg.C for 1-60min, then separated into solid and liquid components, an extracted solution is sterilized or the extracted solution is sterilized, subjected to solid-liquid separation and the pH of the solution is reduced to 2-4 at least before sterilization. Then, the prepared extracted solution is concentrated and the pH of the solution is made to 4.5-7.0, preferably 5.5-6.0 by neutralization before or after the concentration to give a beer yeast extract, which is added to seasoning or foods containing a tasty component such as glutamic acid, nucleic acid type flavoring substance, etc. |
