PURPOSE:To obtain an aspartame-containing granular food having improved shelf stability and physical properties, by granulating aspartame with an excipient, blending the granulated aspartame with an organic acid in powder or separately granulated granules and reducing water content of product. CONSTITUTION:A raw material which contains at least the whole amount of aspartame and the whole amount or part of an excipient and, if necessary, the whole amount or part of the raw material except an organic acid is granulated by a conventional procedure. Then, the prepared granulated material is blended and coated with the remaining raw material powder containing the whole amount of the organic acid or the remaining raw material powder containing the whole amount of the organic acid is granulated and blended with the granulated material containing aspartame and then the prepared final product is adjusted to <=2%, preferably <=1.5% water content. |
