PURPOSE:In producing saccharide-containing margarine, to obtain saccharide- containing margarine having improved whipping properties, by using a microwave heater for heating after emulsifying, precisely controlling temperature in aging and also regulating cooling rate after aging. CONSTITUTION:In producing margarine containing 5-50wt% calculated as anhydrous substance of saccharide, a microwave heater is used for heating after emulsifying, the margarine is uniformly heated to a preset optimum aging temperature higher than a rising melting point of fats and oils minus 10 deg.C to + or -2.0 deg.C accuracy. Then, the margarine is cooled at <=5 deg.C/hr rate of cooling. |
