PURPOSE:To obtain a swollen dissolved viscous liquid which can be used in processing into food excellent in, especially, color tone, perfume, storage ability, edibility, etc., by suspending konjak mannan or alginic acid in water to form a viscous suspension and converting this into a fine dispersion in a dispersing vessel prevented from contamination with air. CONSTITUTION:Konjak mannan (including a konjak mannan-containing substance) and/or alginic acid (including an alginic acid-containing substance) is converted into a viscous suspension in the presence of water alone or together with a dissolving agent (e.g., citric acid or phosphoric acid). In this operation, a dispersing vessel which has an inlet and an exit for a liquid is equipped with a dispersing mechanism in the path of liquid and forms a sealed system when the inlet and the exit are stopped is used. While the above viscous suspension is being fed through the inlet to the dispersing vessel in a state in which no air remains, it is converted into a fine dispersion, and the swollen dissolved viscous liquid is continuously discharged through the exit. |
