A device for removing the rind or skin from meat or the like is described, in the case of which, to obtain optimum removal of rind even when the rind varies in thickness, the supporting points for the knife holder are no longer fixedly arranged, but are rather adjustable in opposite directions in dependence on the difference between the forces acting on them.
