PURPOSE:To obtain the titled soybean cookable within an extremely short time, by removing skin and embryo from whole soybean, heating and pressing the obtained half-split hemispherical speed leaf, immersing the leaf in water to attain a specific water-content and drying the soaked leaf. CONSTITUTION:A hemispherical seed leaf of soybean is produced by removing skin and embryo whole soybean used as a raw material. The hemispherical seed leaf is heated e.g. by boiling and pressed e.g. with rill to a flake having a thickness of <=1.5mm, preferably 0.7-1.2mm. The flaky seed leaf is immersed in water until the water-content of the leaf reaches 45wt% or more. The objective soybean can be produced by drying the soaked seed leaf with a hot-air dryer, etc. The water-content of the final product is <=15% in the case of room temperature storage and <=22% in the case of refrigeration storage. |
