PRODUCTION OF ALPHA-GLYCOSYLGLYCYRRHIZIN

摘要

PURPOSE:To obtain the titled substance, having mellow sweetness, rapid development of sweetness as well as sharp residual taste and useful as a food sweetener, etc., by reacting an aqueous solution containing glycyrrhizin and a starchy substance with cyclodextrin glucanotransferase. CONSTITUTION:An aqueous solution containing normally 0.1-25wt% glycyrrhizin and normally 1-50wt% starchy substance is reacted with cyclodextrin glucanotransferase normally at 3-10pH and 20-80 deg.C to afford the aimed alpha- glycosylglycyrrhizin having an equimolar amount or more of alpha-glycosyl residues linked to the glycyrrhizin.
