PURPOSE:To obtain wheat gluten having dent on the surface without damaging the shape while preventing wheat gluten dough from attaching itself to a pushing pin, by making a hemispherical top of the pushing pin which is constructed in such a way that the pushing pin is inserted into a old from the bottom of the mold and pushes out solidified wheat gluten. CONSTITUTION:Firstly, a pushing pin 2 having a hemispherical top 21 is inserted from downward into a pushing pin insertion hole 12 bored through a bottom 11 of a mold 1 and the top part 21 of the pushing pin 2 is penetrated from the bottom 11 into the mold 1. Then, in this state, wheat gluten dough melted under heating is cast into the mold 1 and solidified. Finally, the mold 1 together with the pushing pin 2 is usually inverted, placed upside down and the pushing pin 2 is further pushed in the mold 1 to push out a solidified wheat gluten 31.
