<p>PURPOSE:To obtain the titled lemon immersed in syrup having a flavor of lemon, by slicing lemons boiled in hot water containing sodium hydrogencarbonate, making a saccharide solution permeate the sliced lemons, further putting the lemons and the saccharide solution in cans, sealing and sterilizing under heating. CONSTITUTION:Lemons are boiled in hot water containing 0.1% sodium hydrogencarbonate, cooled with water, etc., sliced into 2mm width and bleached with water until the mix of flesh and fruit juice becomes pH2.8. Then, the lemons are immersed in a saccharide solution having 45% dextrose equivalent and the saccharide solution permeates the lemons while stirring until dextrose equivalent of lemon fructose and the saccharide solution becomes 25-28% and the pH becomes 2.8-3.2. Then, the lemons are packed into cans, etc., the remaining saccharide solution is boiled and adjusted with citric acid to pH2.4-2.6 and 40-45% dextrose equivalent. Further the saccharide solution is cooled to <=45 deg.C, fed to the cans. The cans are deaerated, sealed and sterilized under heating at about 80 deg.C to give the aimed lemon immersed in syrup.</p> |
