PURPOSE:To produce an edible processed blood product prepared by eliminating smell of blood and processing so that the product may be utilized as various food materials, by blending a product obtained by frementing a glucide with an edible yeast with blood or blood components. CONSTITUTION:A glucide, e.g. glucose, sucrose, various oligosaccharides, starch hydrolyzate, etc., is fermented with a well-known edible yeast and the yeast is inactivated to afford the aimed fermentation mixture, which is then blended with blood and/or blood components separated from the blood. The amount of the fermentation mixture is >=5pts.wt. based on 100pts.wt. solid in the blood and/or blood components. |
