PURPOSE:To obtain an oyster meat extract rich in low-molecular weight fraction of an oyster meat component having a molecular weight of <=5,000 and useful as a nutrient-assisting food, medicine, etc., by extracting oyster meat with water. CONSTITUTION:Oyster meat is extracted with hot water of about 40-90 deg.C for about 1-4hr to obtain an extracted liquid rich in a high-molecular substance having a molecular weight of >=100,000 and a substance having a molecular weight of <=5,000 and almost free from the substance having a molecular weight of 100,000-5,000, and the liquid is preferably concentrated. The concentrated liquid is subjected to a means for recovering a substance having a molecular weight of <=100,000, e.g. ultrafiltration membrane treatment or gel-filtration, etc., to recover a fraction rich in a low-molecular substance having to molecular weight of <=5,000. |
