PURPOSE:To retain and improve freshness of fishes, shellfishes, vegetables, fruits, etc., with high safety without toxicity to humans and animals, by using a biochemical energy substance, e.g. sugar phosphate, amino acid phosphate, etc., as an ingredient of a freshness retaining agent. CONSTITUTION:One or two or more of biochemical energy substances, e.g. sugar phosphate, amino acid phosphate, amide phosphate, hydroxy acid phosphate, adenosine phosphate, guanosine phosphate, creatine phosphate, etc., are used as an ingredient of a freshness retaining agent. The above-mentioned substances are added to perishable foods, e.g. fishes, shellfishes, vegetables, fruits, meat, etc., or the perishable foods are dipped in an aqueous solution of the substances.
