摘要 It is known that shellfish can be shelled very effectively by subjecting them to brief heating and a subsequent pressure reduction, so that an explosive parboiling of the body fluid occurs just under the shell, which is thereby loosened. Immediately thereafter the shellfish are thrown into a braking liquid as a result of which the loosened shells are torn off. The product is separated into shells, completely shelled shellfish and partially shelled shellfish, the latter being recycled. In the invention a liquid-covered inclined baffle plate 34 is used instead of a bath of braking liquid, and the shellfish are introduced into the used vacuum chamber 16 in quite thin flows through periodically working diaphragm valves 14, as a result of which all the shellfish hit the baffle plate immediately after the said parboiling. This makes the shelling process so effective that, after draining off the water, the product pumped out of the vacuum chamber can be separated in a pneumatic sifter 28 for delivery of entirely shelled shellfish, without the need for separation and recycling of only partially shelled shellfish, and this is achieved without damaging the shelled shellfish and without reducing the yield. <IMAGE>
