Use of heat-detoxified proteins of the germ of protein-rich and oil- and protein-rich seeds (soy bean, lupin, peas, field beans, beans) for human nutrition

The invention proposes an inexpensive method of manufacture using germinated cotyledons which are then detoxified by boiling. These cotyledons may be consumed in three ways: a. nondesiccated in the form of kernels, alone or as a mixture; b. desiccated in the form of kernels; c. desiccated and then finely ground to produce flours, to produce ice creams, yoghurts, purees; or mixed with cereal flours to produce instant baby porridges or alternatively flours intended for baking, biscuit manufacturing, crisp bread manufacturing, pastries and pastas or mixed with prepared meat products (pâtés, sausages, dry sausages and the like).
