PURPOSE:To dry a raw food with air and smoke the food with agitated smoke at a controlled temperature by using an apparatus furnished with a heater for heating wood chips, a thermostat, a humidity sensor and a blower. CONSTITUTION:A sirocco fan 10 is driven to such outer air and aerate a food 7. The water-content of the food is detected by a humidity sensor and the power source of the sirocco fan is controlled by the sensor. After the completion of the air-drying of the food, wood chips 6 on a grate 5 are heated while controlling the chip temperature with a thermostat 3 to effect the smoking of the food 7. Smoke is agitated with air stream sucked with the sirocco fan. Water dripped from the food 7 is received by a water-pan 8 and discharged.
