The formation of lipidic spherules dispersed in an aqueous medium, the stability and the encapsulation ratio of said lipidic spherules are improved by adding to the lipid(s) intended to form the leaves of the spherules, before the formation of said spherules, at least one alkaline or alkaline-earth cholesterol-sulphate of ammonium cation.
