An apparatus 10 for the evaporation and cooking of toffee (or other liquid mass) comprises a closed vessel 12 having an inlet 22 at the base thereof and an outlet 59, 60 towards the top and at one side of the vessel 12. A toffee premix liquor 28 is continuously fed in the inlet 22 and discharged through the outlet 59, 60. High speed counter rotating stirrers 48, 52, are provided in the vessel 12 to agitate the liquor 28 in a vigorous and turbulent manner, such as to form the liquor 28 into a vortex, the extremities of which are urged towards the outlet 59, 60. The vigorous and turbulent agitation of the liquor 28 assists the production of high quanlity toffee as a continuous process, at a relatively high throughput rate. |
